Ingredients:

3” x 3” (8 x 8 cm) kombu
3 cups (700 ml) water
2 satoimo or taro root
2” (5 cm) daikon
3” (8 cm) carrot
A few stalks komatsuna (you can substitute with spinach)
3-5 Tbsp. “Saikyo” Shiro Miso or Kyoto Miso (different from regular white miso)
7 oz (200 g) silken tofu
4 pieces round mochi (rice cake)
Yuzu zest (optional)
