梅干し(瓶干し梅干し)の作り方です。梅をジップロックで漬け、ビンのまま土用干しし­ます。ざるや重石もいらないので、この方法なら初心者でも梅干しが簡単に作れます。南­高梅のように、皮も実もやわらかくなっておいしいですよ。
Umeboshi are a type of Japanese pickle. They are a traditional preserved food which is popular in Japan. Their taste very salty and sour but they are also very healthy. They are usually served as side dishes for rice or eaten on rice balls for breakfast and lunch. Umeboshi are usually eaten with rice, in small quantities.

【材料】
黄色く熟した梅‥‥1kg
粗塩‥‥180g
ホワイトリカー(焼酎)‥‥100ml
しその葉‥‥1束(100g~150g)
しその葉をもむ為の塩‥‥20g

【Ingredients】
1kg Ume fruits(Japanese plums)
180g sea salt
100ml shochu or brandy
100g~150g fresh red shiso leaves
20g salt

【作り方】
●手順1:塩漬け
1、梅をきれいに水洗いする。
2、竹串でヘタを取り除く。
3、清潔な乾いた布巾で水気をしっかりふきとる。
4、梅をジップロックに入れる。
5、梅の重さに対して18%の塩を入れる。
6、焼酎を入れる。水が早く上がり、梅のカビ防止にもなります。
7、もんで混ぜ合わせる。
8、袋の空気を抜き、ジッパーをしっかり閉じる。
9、液がもれないように、もう一枚ジップロックに入れる。
10、袋に入った梅を平らにして、本をのせて重石をする。
11、梅酢が十分に出たら重石をはずし、赤しそが出回るまでこのまま待つ。
●手順2:赤じそ漬け
1、葉を枝から摘み取る。
2、茎の部分を取り除く。
3、しその葉を水洗いする。
4、ザルにあげて水気をよく切る。
5、用意した塩の半分を振る。
6、強くもんでアクを出す。
7、出たアクは捨てる。
8、残りの塩をふる。
9、もう一度もんで、アクを捨てる。漬け上がった液体は、梅酢と呼ばれています。
10、梅酢を別の容器に取り出す。
11、紫蘇に梅酢を加えると、赤く発色し、赤梅酢ができます。
12、消毒したガラス瓶に、梅ともんだシソの葉を交互に入れ、一番上がシソになるよう­にする。
13、最後に赤梅酢をかける。
14、ふたをして、土用干しまで冷暗所に置く。
●手順3:土用干し
1、土用(7月20~8月6日頃まで)の晴天の続く日を選び、昼間だけ1週間くらいふ­たを開けて瓶ごと日にあてる。
2、ホコリや虫が心配な場合は、ビンのふたをゆるめて干しましょう。
3、土用干しの後、すぐにでもおいしく食べられますが、1~2ヶ月後には味が落ち着い­てきて、さらにおいしくなります。

【Recipe】
●Step1: Salting
1、Rinse ume plums and drain.
2、Remove the stems with a bamboo skewer.
3、Wipe off moisture with kitchen papers or clean towels.
4、Put plums in a ziploc bag.
5、Add salt. (18% salt)
6、Put shochu. That killed the germs.
7、Rub and mix together.
8、Remove air from the bag and close a zipper well.
9、Put it in another bag just in case.
10、Place a weight (such as a book) on top of them so that it is held under the water.
11、Leave it in a cool, dark place until the end of July, adjusting the weight occasionally.
●Step2: Coloring and Flavoring
1、Separate leaves from the branch.
2、Remove the stalk from the leaf.
3、Wash the leaves well.
4、Drain in a strainer.
5、Sprinkle half the amount of salt over shiso leaves.
6、Rub well and firmly squeeze liquid out of shiso leaves.
7、Discard the liquid.
8、Sprinkle the remaining salt.
9、Repeat the process one more time. The liquid extracted by pickling ume are called umezu (ume vinegar).
10、Pour out umezu into another bowl.
11、Put squeezed shiso leaves back in umezu so that the umezu turns red.
12、Put the plums and shiso leaves in a sterilized glass jar by turns.
13、Pour red umezu over pickled ume in the jar.
14、Cover and let stand until the end of July.
●Step3: Drying the plums
1、During good weather at the end of July, dry the fruits outside for seven days. (during daytime only)Leave a bottle open.
2、Or you can put the lid on the bottle (loosely ) to prevent dust.
3、Now you can eat them, but it’s good to wait for a few months for better flavor.
